Watermelonade Recipe

Beat the heat with a chilled Watermelon treat.

12lb watermelon (remove seeds or seedless)
1/4 cup of sugar (divided)
4 tsp of fresh lemon juice (divided, or lime juice if preferred)
16 cups of ice (cubed, divided)

Cut watermelon into 2 inch chunks & discard the rind.
Puree 1/4 of the watermelon (3lbs) in a blender with:
1Tbsp of sugar, 1tsp of lemon juice, 4 cups of ice & a pinch of salt.
Strain into a large bowl using a fine mesh sieve or sifter.
Repeat process 3 more times & serve over ice.
To sweeten, try adding a little honey.
Garnish with a sprig of mint (or rosemary).

Makes about a gallon, takes about 30 minutes.
